But what's interesting in our cooking habits is how frequently a minor ingredient actual houses the bulk of the nutritional value of a meal.
Consider the spring-onion. You've probably never utilised it yourselves unless doing a Chinese or some specialty item of occasion. But consider that a single spring onion holds more nutrients than any fast food dish available from the high street; ok not a tough competitor to beat in this environment but given its diminutive size and place in cuisine it is an arresting notion.
While we are on the subject as we are all struggling to meet our five-a-day quota bear in mind that the humble spring-onion (and regular onions as well) are exceptionally high in vitamin C, A, B1 and B2, as well as this they are rich in potassium and magnesium (which is the stuff that combats depression) we could go on but you take the point, it's merely an ingredient to most people and yet it will contain more goodness than almost anything else you consume in one sitting.
