This is an excellent twist on a regular Speg. Bol. and was a big seller at my first restaurant.
the trick to this one is using a really good quality sausage. go for the best quality you can afford.
Ingredients:
- 6 sausages skinned and minced up
- 2 cloves of garlic crushed
- 2 tablespoons of olive oil
- 2 tablespoons of tomato paste
- 2 teaspoons of sugar
- pasta spaghetti
- 1 red pepper chopped thinly
- 1 onion (quarted)
Method:
first get your pasta done and ready. put aside
heat the oil in a wok on a med. high heat and fry the garlic, onion and pepper for about 3 minutes
then turn the heat up to high and add the sausage mince and keep stirring and breaking up the meat so it separates to a mince.
stir in the sugar.
stir in the tomato paste.
reduce the heat and let simmer for 4 or 5 mins
add the pasta and mix into the sausage mixture.
